The Italians started a slow living movement in reaction to ‘fast food’, and the ethos of slow living has spread across all aspects of life. Simply Beef and Lamb challenged me to create a ‘live slow’ recipe, which reflected this type of lifestyle. My balsamic lamb chops and minted peas recipe is simple, nutritious, tasty and fits nicely into a live slow lifestyle.
This recipe is actually super quick to make, but I feel that it’s perfect because as a working family with a toddler, a baby arriving any day and a house move all happening at once, life can get a bit hectic. On Thursday evenings my mum and dad have Toby over to stay, giving Phil and I the chance to slow down the pace. On Sundays, we do family trips out but they generally consist of nice walks through the countryside and this meal works on both of those occasions because it’s so simple to make that it gives you your day back to sit, relax, or do something nice and chilled as a family before tucking into some tasty food.
Balsamic Lamb Chops and Minted Peas – Serves 4 in 15 minutes
- 8 Lamb Chops
- 3 Garlic Cloves (Or to suit your taste!)
- 2 Tbsp Olive Oil
- 1 Tsp Ground Black Pepper
- 1 Tsp Sea Salt
- 4 Handfuls Frozen Peas
- 6-8 Mint Leaves, Chopped
- 50g Non-Salted Butter
- Chop or crush the garlic and pop it in a bowl with the oil, salt and pepper. Add the lamb chops and coat them in the mixture.
- Put your grill on a medium to high heat and place the coated lamb chops on to a grill pan. Put them under the grill for 5 minutes, or until browned on the top side.
- Remove the lamb chops and turn them over, then put them back under the grill. Once this is done, put the peas into a saucepan, just cover with water and put them on a high heat on the hob.
- Whilst the peas and lamb cook, place your butter and chopped mint leaves in a bowl and mix.
- Once the water in the pan is boiling and the peas are cooked (3-5 minutes), drain them in a colander then put them back into the pan, along with the mint and butter. Use the residual heat from the pan to melt the butter, mixing the peas in it thoroughly to coat before dishing them up.
- Remove the lamb from the grill once brown on the second side and place on the plate, drizzling some balsamic reduction over them. You don’t do this during the cooking process because the sugars in the reduction will burn.
This balsamic lamb chops and minted peas recipe couldn’t be any easier, but it’s really tasty and gives you the freedom to sit back and enjoy life. It would be great with mash or roast potatoes or some couscous too. Once it’s served, there’s no rush, the family can sit at the table and enjoy their meal whilst chatting and enjoying one another’s company.
